Easy Vegetable Short Rib Soup - CDKitchen.com

ingredients

2 pounds short ribs or oxtails
1 can (15 ounce size) diced tomatoes, drained
2 carrots, sliced
3 ribs celery, thinly sliced
2 medium onions, diced
6 potatoes, peeled and diced
3 cups beef broth
1 teaspoon salt
4 peppercorns

directions

Combine the ribs and remaining ingredients in the crock pot.

Cover the crock pot and cook on low heat for 8 hours, or high heat for 4 hours, or until the ribs (or oxtails) are tender and the potatoes are soft. Remove the ribs from the soup. Cut the meat away from the bones and cube into small pieces. Return the meat to the soup and discard the bones.

Adjust seasoning as needed before serving.
