Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.

2-5 hrs
ingredients
3 ounces cream cheese, softened
1 tablespoon lemon juice
1/8 teaspoon salt
1/3 cup sugar
1 cup canned diced peaches, well drained
1 cup fresh blueberries
1 pint sour cream
fresh blueberries and peaches for garnish, optional
directions
Combine the cream cheese, lemon juice, salt, and sugar in a bowl and mix until smooth.
Fold in the peaches, blueberries, and sour cream. Mix well so the fruit is coated in the creamy mixture.
Line a loaf pan or 8x8 baking dish with plastic wrap, leaving some of the wrap extending over the sides. Pour the fruit salad into the pan. Cover with plastic wrap.
Place the pan in the freezer until firm (about 3 hours). Remove the pan from the freezer about 20 minutes before serving.
Invert the frozen salad onto a plate and remove the plastic wrap. When slightly thawed, slice with a sharp knife.
Serve while it's still chilled garnished with additional fruit if desired.
