ingredients
2 large yellow or sweet onions, thinly sliced
4 green or red bell peppers, julienned
1/4 cup olive oil
12 hot turkey sausages (or your favorite)
directions
In large saute pan, over medium heat, cook the onions and peppers in olive oil. Stir frequently until the peppers are soft and the onions are caramelized, about 30 minutes.
Cook the sausages on a grill or brown them in a skillet and serve them atop a heaping mound of peppers and onions.

We made these exactly as directed but served them on soft hoagie buns. Awesome! So simple yet very flavorful. The caramelized onions are the key :)
