These aren't your usual onion rings! They have Parmesan cheese in the crispy coating so you get cheesy goodness in every bite. Pair them with the creamy roasted red pepper dipping sauce for a snack you won't soon forget.

Onion Rings
vegetable oil, for frying
1 1/2 cup flour
2 teaspoons baking powder
1 1/2 teaspoon seasoned salt
3/4 cup freshly grated parmigiano-reggiano cheese
1 1/2 cup milk
2 tablespoons vegetable oil
1 large egg, separated
2 large yellow onions, sliced to 1/4 inch thickness
Roasted Red Pepper Dipping Sauce
1 jar (11 ounce size) roasted red peppers, well drained
1/2 cup sour cream
1/2 cup mayonnaise
1/2 teaspoon seasoned salt
1/4 teaspoon ground black pepper
1/4 teaspoon garlic powder
1/4 teaspoon ground red pepper
Onion Rings: In large kettle, pour oil to a depth of 4 inches. Heat to 360 degrees F.
In large bowl, mix flour, baking powder, seasoned salt and cheese. In another bowl, mix milk, 2 tbsps. vegetable oil and egg yolk. Add milk mixture to flour mixture, whisking to mix.
In another small bowl, beat egg white at high speed with mixer until soft peaks form. Add egg whit to flour mixture, stirring until smooth. In batches, dip slices onions into batter. Drain slightly and fry in batches, 2 to 3 minutes or until golden brown. Serve with Roasted Red Pepper Dipping Sauce.
Roasted Red Pepper Dipping Sauce: In work bowl of food processor, mix roasted red peppers, sour cream, mayonnaise, seasoned salt, pepper, garlic, powder and ground red pepper. Process until smooth. Cover and chill.
