2 cups flour
1 1/4 cup sugar
1 1/2 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon cream of tartar
1 small orange, rind and juice (see next ingredient)
1/2 cup juice from orange plus enough water
1/2 cup shortening
2 eggs
3/4 cup raisins
Sauce
1/4 cup sugar
1/4 cup orange juice
2 teaspoons rum extract
Sift together the dry ingredients. Add orange rind, juice and shortening.
Add eggs and beat 2 minutes. Fold in raisins. Pour into a greased foil-lined loaf pan. Bake at 350 degrees F for 1 hour or until done. Remove cake from pan.
Sauce: mix all ingredients together; pour over cake.
