ingredients
1 pound extra-lean ground beef
1 medium onion, chopped
2 teaspoons cumin
1/4 teaspoon salt
2 Anaheim chilies, chopped
1 large tomato, chopped
4 ounces finely shredded Colby-Monterey Jack cheese blend
1 package (16 ounce size) white corn taco shells
directions
In a large skillet, brown ground beef over medium-high heat. Drain.
Add onion, cumin, and salt. Cook for 3 minutes, stirring frequently. Add chilies and tomato and cook for 3-4 minutes or just until chilies are tender. Stir in cheese.
To serve, spoon beef mixture into taco shells. If desired, serve with salsa.
