Pomegranate molasses (syrup) can be purchased in some specialty grocery stores but it's often hard to find in regular supermarkets. But you're in luck as it's very simple to make. 8 pomegranates should yield about 4 1/2 cups of juice. The molasses is used in a variety of ways. It's popular in middle eastern cooking, used in cocktails, and delicious as a glaze on cooked meat. Unlike grenadine, which is also made with pomegranate juice and sugar, it's not overly sweet which makes it good in savory dishes.

8 pomegranates
1/4 cup sugar

Slice the pomegranates in half. Using a juicer or citrus reamer, extract as much juice as possible. Strain out any seeds or pulp. Place the juice in a saucepan with the sugar.

Bring the juice to a boil over medium-high heat. Reduce the heat to a simmer and let cook, stirring occasionally, for 15 minutes or until it is thick, dark, and syrupy.

Store the pomegranate molasses in an airtight container in the refrigerator for up to 4 months.
