Leeks

Similar to an onion, the leek has a white bulb and long dark green leaves and a mild onion-like flavor. To prepare leeks: Trim off the coarse green part leaving just a little of the still-tender green. Leeks contain a lot of sand so they need to be well rinsed. Unless you need them whole, try cutting them in half lengthwise and rinsing them under running water. You can also soak them in water after the root and stalk ends are trimmed. Try substituting leeks in recipes calling for onions or shallots.
