Beets
Aside from their beautiful color, beets have an earthy, sweet flavor.
They can be purchased fresh or canned. The best way to cook fresh beets is to leave the skin on and then cook in boiling water. Let them cool to where you can handle them, then rub the skins off under running water. Leaving the skin on while cooking will minimize the "bleeding" of color.

fun tip:
If you want to get your kids excited about beets, look for the Chioggia beet, which is also known as the candy cane beet because it has red and white stripes. I'm not sure you can convince them they are eating candy, but it might help get them interested in trying them!
