The American Egg Board had it correct with their slogan: "The Incredible Edible Egg". Per their website, "One egg has 13 essential nutrients in varying amounts including high-quality protein, choline, folate, iron and zinc for only 75 calories. Eggs also play a role in weight management, muscle strength, healthy pregnancy, brain function, eye health and more."
Can't remember if an egg is fresh or hard boiled? Just spin the egg. If it wobbles, it's raw. If it spins easily, it's hard boiled.
To test an egg for freshness, put it in water. A fresh egg will sink in water, a stale one will float.
Eggs are important in baking. They provide leavening; add color, texture, flavor and richness to the batter. Beaten eggs in a cake are a leavening agent. The air in the batter causes it to expand and causes the cake to rise. Eggs are also used as a thickener in custards and creams, and to glaze pastries and breads.
In cooking, eggs often act as a binding agent such as in meatloaf.
