It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).


These fluffy eggs in a cloud are a brilliant twist on breakfast. Toast slices are baked with ham, cheese, and whipped egg whites with the yolk nestled in the middle.


4 slices bread
4 slices cooked ham
4 slices Swiss or Cheddar cheese
4 large eggs, separated
Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper or foil.
Toast the slices of bread and place them on the baking sheet in a single layer. Top each with a slice of ham and a slice of cheese.
Place the egg whites in a mixing bowl and beat on medium speed with an electric mixer until stiff peaks form. Spoon the egg whites onto the bread slices, forming a well in the center of each. Carefully place an egg yolk in the center of each egg white mound.
Place the baking sheet in the oven and bake at 350 degrees F for 10-15 minutes or until the egg whites are lightly browned and the egg yolks doneness are the equivalent of over-easy.
Remove the baking sheet from the oven. Carefully transfer the toasts to individual serving plates using a spatula.
Serve immediately.
