Single-serve egg cups made with croutons, ham, egg, and cheese. You can easily change this recipe up to use other ingredients like bacon instead of ham or a different kind of cheese. You can make these up to an hour ahead of time (any longer and the croutons will get soggy) and keep in the fridge until ready to bake. To make more than one, simply change the serving size below and the recipe will automatically adjust all the ingredients.
1/4 cup seasoned croutons
1/2 tablespoon butter, cut in small bits
1 tablespoon diced ham
1 egg
1 tablespoon shredded cheddar cheese
Preheat the oven to 350 degrees F.
Place the croutons in the bottom of a greased muffin cup. Dot with the butter and sprinkle the ham over the top.
Carefully crack the egg open and place the egg on top of the ham. Sprinkle with the cheese.
Place in the oven and bake at 350 degrees F for 15 minutes or until the egg is set and the cheese is melted. Serve immediately.

Instead of hard croutons I used a day old french bread torn into small pieces and placed a oven safe bowl of water on the bottom rack in the oven that kept the recipe from being dry. It was delicious.

The only reason that I didn't give this 5 stars is that I found it a bit dry, otherwise the flavor was great! Does anyone have a suggestion as to how it can be made with more moisture without making it soggy??

I used ramekins too, and there was enough "stickiness" to convince me that muffin tins would not be the way to go. These were delicious though! Don't add salt; the ham and seasoned croutons made these salty enough.

I used small ramekins for this recipe because I wasn't sure if the eggs would come out of the muffin tins in one piece. They seemed to hold their shape just fine so using a muffin tin would work just as well. You shouldn't need any extra seasoning if you're using seasoned croutons - they gave the eggs plenty of flavor and along with the ham, enough saltiness. These were really good!
