Baked Salmon With Garlic And Herb Crust

ingredients
1 clove garlic, finely chopped
1 tablespoon dried marjoram
4 tablespoons flat leaf parsley, chopped
3 tablespoons fresh bread crumbs
4 tablespoons extra virgin olive oil
1/2 teaspoon salt
ground black pepper to taste
1 1/2 pound salmon fillets, skinned
directions
Heat the oven to 400 degrees F.
With a mortar and pestle crush the garlic to a paste. In a small mixing bowl, combine the garlic, marjoram, parsley, breadcrumbs, olive oil, and salt. Grind in a little black pepper and stir until you have a paste.
Cut the fillet crosswise into four pieces, lightly grease a baking dish with about 2 Tsp. olive oil, arrange the fillets with at least 1 inch apart.
Bake the salmon for about 5 minutes, remove from the oven, spread the paste mixture over the fillets and bake the salmon for another 5-10 minutes.
