ingredients
2 tablespoons lemon juice 1/4 cup packed brown sugar 4 salmon fillets 1 tablespoon butter, melted 4 thin slices lemon 8 teaspoons brown sugar
directions
Preheat the oven to 375 degrees F.
Sprinkle the lemon juice in the bottom of a 11x7 baking dish. Evenly sprinkle the packed brown sugar over the lemon juice.
Place the salmon fillets in the baking dish. Drizzle them with the melted butter.
Place the baking dish in the oven and bake the salmon, uncovered, for 15 minutes at 375 degrees F. Carefully flip the fish over. Place one lemon slice on each fillet. Sprinkle with the remaining brown sugar.
Return the baking dish to the oven and bake for 15-20 minutes longer or until the fish flakes easily with a fork.
Drizzle the fish with some of the sweet lemon liquid from the baking dish when serving. Serve hot.

This is AMAZING!!!! I can only speak for using fresh salmon though. We fish for salmon and have a few different ways we fry, bake, or BBQ. This is by far my favorite!!

Candied salmon? Who knew? It was so delicious! The brown sugar was really amazing on the fish. I was afraid it might taste too sweet but it was balanced by the lemon. The fish stayed very moist and flaky. If you aren't normally a salmon lover this might be a nice way to try it since it has that extra sweetness.
