Fresh strawberries are filled with a creamy mixture of mascarpone cheese, dried cranberries, orange zest, and orange liqueur.


8 ounces mascarpone cheese
1/4 cup dried cranberries, finely chopped
1/2 teaspoon orange zest
1 tablespoon orange liqueur or orange juice
12 large (jumbo if available) strawberries, halved
Mix together the mascarpone, dried cranberries, orange zest, and orange liqueur in a bowl.
Spoon the mascarpone filling into a pastry bag fitted with a large star tip.
Place the strawberries on a platter, cut side up. Pipe the mascarpone filling onto each strawberry half.
Carefully transfer the platter to the refrigerator and let the strawberries chill before serving. Serve cold.

This is one of those rare recipes that has delicious flavor, is simple to make, and is just pretty to look at too! I recommend at least making the filling a day ahead of time for the flavors to meld. It tasted good when first mixed up, but amazing after 24 hours.
