Southern Fried Chicken Livers

You don't have to be a southerner to appreciate these deep-fried delicacies. Fresh chicken livers are coated with a light but crispy coating and fried until golden brown. Serve them with white gravy for the full treatment.

ingredients

1 pound chicken livers
1/2 cup all-purpose flour
1 teaspoon garlic salt
freshly ground black pepper
1/4 cup vegetable oil

directions

Rinse the chicken livers and pat dry. If they are large, cut them into bite-sized pieces.

Combine the flour, salt, and black pepper in a zip-top plastic bag and shake to combine. Add the livers to the bag, seal the top, and toss to combine. Make sure the livers are coated completely with the flour mixture but shake off any excess.

Heat the oil in a skillet over medium-high heat. Add the livers, in batches if needed so they aren't crowded. Fry about 3 minutes on each side or until browned.

Remove the livers from the pan and let drain on paper towels. Serve hot.

    Sounds perfect-Except-- fry them in bacon grease-now you got something! I also learned to pierce them first or they'll pop all over! Me and my kitty never wasted a bite-

    I would make one change. Serves one. I wish this was at some fast food drive thru. If there is any leftover, saute some onions and make a gravy add the livers. I'm hungry all over again.

    Made one small modification to this recipe. Wrapped the livers in bacon and secured with toothpicks, then tossed in the flour mixture and then fried using deep fryer. In a word: AMAZING!

    Just make sure that you remove the yellow bile ducts from the livers. The removal might shred some of the livers but don't be concerned. The removal takes away that sharp aftertaste and they turn out just as delicious as can be.
