ingredients

1 head leaf lettuce, torn or chopped
1 bunch green onions, chopped
1/4 cup sliced toasted almonds
1 can (15 ounce size) mandarin oranges, drained
1/4 cup oil
2 tablespoons sugar
2 tablespoons white vinegar
1/8 teaspoon almond extract
2 chicken breasts, grilled and sliced

directions

Combine the lettuce, green onions, almonds, and oranges in a bowl. Toss to combine.

Combine the oil, sugar, vinegar, and almond extract in a bowl and whisk until smooth. Toss the salad with the dressing.

Arrange the grilled chicken on the top of the salad and serve immediately.
