Boulevard Inn Chicken Salad With Hearts Of Palm

ingredients
2 1/4 pounds skinless, boneless chicken breasts, cooked and cut into cubes
1 cup sour cream
1/4 cup mayonnaise
salt and pepper, to taste
2 cans (14 ounce size) hearts of palm, drained, reserving
2 tablespoons palm liquid from the can
chopped Boston lettuce
tomato slices
black olives
fresh sprigs parsley
crumbled bleu cheese
chopped cooked bacon
directions
Mix chicken cubes with sour cream and mayonnaise. Add salt and pepper. Dice 1/4 of the hearts of palm and add to mixture along with reserved liquid. Mix well.
Set bed of lettuce on individual salad plates. Serve a scoop of the mixture over each bed of lettuce. Cut remaining hearts of palm into strips and divide over salads.
Add tomatoes, olives, parsley, bleu cheese and bacon.
