1 cup butterscotch, chocolate, or peanut butter chips
1/2 cup peanut butter
1/2 cup peanuts
2 cups chow mein noodles
Combine the chips and peanut butter in a 2-quart microwave-safe bowl. Place in the microwave and cook on 50% power for 3-5 minutes, stirring every 2 minutes.
Stir in the peanuts and chow mein noodles and mix until the noodles are well coated in the mixture.
Drop the haystack cookies by spoonfuls onto waxed paper. Let dry at room temperature overnight or place in the refrigerator for 3-5 hours.
Store the haystacks in an airtight container.

These were great. Made the first batch as directed. Then my next batch, I split the amount of butterscotch to half and added white chocolate chips. Yummy.

Most no bake cookies are done in a double boiler but this is even easier done in the microwave!
For some reason I came out with 348 servings instead of 48 when I changed the serving size. If you decide to change it like I did I would recommend more chocolate than the recipe calls for because I didn't have enough chocolate to cover all the cookies. Other than that it is definitely a delicious recipe.

I have boxes of fine chocolates left over from Christmas (See's, Lowery's, etc) and these haystacks are better!They are crowd pleasers! Thanks!

Made these without the popcorn...A Big hit!!! so easy!!! gosh could have eaten the entire lot by myself...
