Grilled Pizza With Buffalo Chicken And Blue Cheese

ingredients
1 1/2 cup thinly sliced leftover chicken
1/4 cup hot sauce
1 pound pizza dough, stretched into a 12-inch round
1 tablespoon olive oil
6 ounces blue cheese, crumbled
kosher salt and freshly ground black pepper
3 tablespoons thinly sliced fresh chives or scallion greens
directions
In a medium bowl, toss the chicken with the hot sauce.
Heat gas grill to medium-high. Grease a large baking sheet with olive oil and set rolled-out pizza on top. Carry the dough and toppings to the grill. Brush top of dough lightly with oil.
Using both hands, set the pizza onto the grates. Cook, covered on the grill, until the top of the pizza starts to bubble and the bottom gets nice grill marks but does not burn, 2 to 3 minutes.
Flip the dough using tongs and a large metal spatula. Transfer to cooler part of fire. Sprinkle with chicken, blue cheese and salt and pepper. Cook, covered, until toppings heat though and cheese melts, about 6 minutes.
Transfer pizza to cutting board, let rest for couple of minutes. Sprinkle with scallions or chives. Slice and serve.
