New Orleans Corn Bisque With Sausage

ingredients
4 tablespoons butter
2 tablespoons flour
1/2 cup onion, chopped
1 pound smoked sausage, cut into 1/4 inch slices
1 quart milk
1 can (16 ounce size) cream-style corn
1 can cream of potato soup, undiluted
1 tablespoon hot pepper sauce
1 tablespoon Cajun seasoning
1/2 cup grated Cheddar cheese
1/4 cup chopped parsley
directions
Melt butter, add flour and blend thoroughly. Add onion and smoked sausage. Saute over medium heat for 5 minutes.
Add next 5 ingredients, cover and cook over low heat for 20 minutes. Stir occasionally.
Just before serving, sprinkle with cheese and parsley.
