The soup is thick and creamy, with just the right amount of sweetness from the corn. The potatoes add a heartiness to the soup, while the celery and onion give it a subtle savory flavor.

4 tablespoons butter or margarine
6 tablespoons onion, chopped
3/4 cup celery, large dice
2 1/2 cups hot water
2 cups raw potato, peeled, cut in 1/2-inch cubes
3 cups frozen corn, thawed
2 tablespoons sugar
2 teaspoons salt
1 pinch white pepper
3 tablespoons all-purpose flour
1 quart half and half, divided use
In large pot or Dutch oven, melt butter using medium heat. Add onion and celery, simmer until softened but not browned, about 5 minutes.
Add water, potatoes, corn and seasonings. Cover and simmer 30 minutes, or until potatoes are tender.
Whisk flour into 1 cup half and half, and stir flour mixture into soup. Add remaining half and half. Simmer about 15 minutes, until soup thickens.
Add salt and pepper if needed. To thin soup, add milk. To thicken soup, simmer 5-10 minutes more as desired.

Very good flavor but a little thin for a chowder

I love Mimis chowder an this turned out pretty close! I altered it a bit, added an extra cup of corn (because I love corn) and I used sweet corn. I wanted it to cook faster so I sliced the potatoes fairly thin and it didn't take very long to cook. I do wish it had come out a bit thicker, I let it simmer for a while after adding the cream but it didn't thicken much but it still tasted great!!

This soup tastes just like Mimi's! It was delicious and my whole family loved it! I did not alter the recipe at all and it turned out amazing. Highly recommend it if you like chowder.
i live very close to this place and still never been able to eat there. my grandfather built the building the cafe. But it was intended for a house. Yearssssssss ago
