Grilled Apple And Turkey Bites

These "grilled" appetizers only take minutes to make but are always a hit. You can substitute chicken for the turkey if you wish. And, if you want them to really be "grilled" looking, use a grill pan for the apples and/or for toasting the bread. You can also make these into open face sandwiches by using full-size bread slices (you'll need a sturdy bread, sandwich bread won't work). Hint: you can cook the apples ahead of time and simply reheat them before assembling.

ingredients
1 large apple
4 slices (1 ounce each) cooked turkey breast
16 thin slices French bread
1/4 cup Dijon mustard
directions
Core the apple and then cut into wedges (you'll need one wedge per slice of bread)
Coat a large frying pan or skillet with non-stick cooking spray or olive oil. Add the apples to the prepared pan and cook over medium heat turning occasionally until the apples are soft and lightly browned, about 3 minutes.
Quarter the turkey slices into 2" squares.
Place the slices of French bread on an ungreased baking sheet and place under the broiler or in a 425 degrees F oven. Watch carefully as they can burn quickly. Toast them on each side until light golden brown.
Remove the bread from the oven and spread one side of each slice with the Dijon mustard. Top with a square of turkey and a slice of the apple. Serve immediately.

I added a drizzle of honey on top of the apples once assembled - it balanced the dijon perfectly! Super good!
