4 ounces potato, boiled and mashed 1 small dressed crab OR 175 grams can crabmeat, drained 1 egg, separated salt black pepper oil
Mix the mashed potato and crabmeat together, then add the egg yolk, salt and pepper. Whisk the egg white until stiff, then fold into waffle mixture. Heat a waffle iron, brush with oil and heat again if necessary. Spoon a quarter of the waffle mixture into the iron and cook for 5 minutes until golden. Repeat with the remaining mix to make four waffles. If you dont have a waffle iron, lightly oil four 10 cm / 4 in cooking rings and set in a lightly oiled non-stick frying pan. Divide the mixture between the rings and press down well. Cook over a medium heat for 3 minutes. Remove the rings, flip and cook the second side for 3 - 4 minutes until golden.
