Not to be confused with evaporated milk, sweetened condensed milk is very sweet (and very sticky) and used primarily in desserts.

1/3 cup butter
1 pound fresh crab meat
1 pint sour cream, at room temperature
2 tablespoons tomato paste
2 tablespoons dry sherry
2 tablespoons grated Parmesan cheese
1/4 teaspoon black pepper
hot, cooked white rice
Heat a deep skillet over medium heat. Add the butter. When melted, add the crab and cook, stirring frequently, for 2 minutes.
Remove the pan from the heat. Stir in the sour cream, tomato paste, sherry, Parmesan cheese, and pepper.
Return the pan to the heat and cook, stirring constantly, until heated through. Do not let the sauce boil or the sour cream may curdle.
Serve the crab newburg over hot cooked rice.

This was quite an easy recipe to follow, and it came out great! When it comes to seafood, I like when that "seafood" taste is bearley noticeable, and this recipe had that. I uplaodaed a picture of it. I made a serving size for one, since I was the only one eating it, however, I tweaked it a little, because when I changed the portion size on here, the tablespoon/teaspoon sizes were strange, so I pretty much improvised to what I thought was more appropriate. I forget what the exact conversion was on this website, but I think it said 1/8 teaspoon for the tomatoe paste, grated cheese, and sherry, which seemed too little, so I just used 1 tablespoon. All i know is it came out great, and if anyone tries this recipe, don't be afraid to experiment, unless you are making enough for 4 people. This is the easiest of all the Crabmeat Newberg recipes on here.
