Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.
Spicy Tomato and Chevre Dip

ingredients
1 tablespoon olive oil
2 cloves garlic, peeled and chopped
1 can (15 ounce size) diced tomatoes
1/2 orange, grated zest of
1 tablespoon fresh herbs such as basil, thyme or rosemary, chopped
1/2 teaspoon cayenne pepper
1 tablespoon tomato paste
1 small log goat cheese or chevre
baguette or crackers
directions
Heat the olive oil in a saute pan. Add the garlic and saute for a few seconds.
Add the tomatoes, orange rind, fresh herbs, cayenne pepper and the tomato paste. Stir to combine and allow to simmer a few minutes to reduce.
Spoon the mixture into an oven proof dish. Cut the goat cheese log in half and lay in the spicy tomatoes. Bake in a preheated 350 degree F oven for about 30 minutes.
NOTE: A toaster oven is ideal for this dish. A few seconds under the broiler will nicely brown off the top of the cheese. Serve with crackers or slices of the baguette.
