Bread

4 slices thinly sliced white sandwich bread, crusts removed
2 tablespoons cream cheese or chevre cheese

Filling

2 tablespoons mango chutney
sprigs fresh watercress, thick stems removed
OR
stemmed arugula leaves

directions

Spread one side of each bread slice with the cream cheese. Spread half bread slices with a layer of chutney and add several watercress sprigs. Top with the remaining bread slices, cream cheese-side down, and slice each sandwich diagonally or into 4 strips to form finger sandwiches.
