Cherry tomatoes are filled with bacon, mayo, green onions, Parmesan cheese, and fresh parsley.

ingredients

16 cherry tomatoes
1 pound bacon, cooked and crumbled
1/2 cup mayonnaise
1/3 cup chopped green onions
3 tablespoons grated Parmesan cheese
2 tablespoons snipped fresh parsley

directions

Carefully slice a thin piece off the top of each tomato. Using a small spoon, scoop out the flesh of the tomato leaving a shell. Turn the tomatoes upside down and place on paper toweling to drain.

Combine the bacon, mayonnaise, green onion, cheese, and parsley in a small bowl. Spoon the bacon mixture into the drained tomatoes. Place on a tray or plate and place in the refrigerator for 2-5 hours for the flavors to meld before serving.

    I don't like the amount of mayonnaise inside the tomato. The parsley adds to much of a sharp taste. The tomatoes get to heavy after adding all the ingredients.

    I make these all the time for family functions and they always go over well. one tip that I suggest is to take a very thin slice off the bottom of the tomato. you need a good sharp knife, but this makes them stand better, and not so tippy.

    Made them New Years and everybody raved. My husband added a cooked chicken breast chopped up with the bacon and they are even better.

    Made these for a large barbecue. Several people came over stating that they really were good. This was an easy to make. The only thing I would do differently was that even though I though I chopped up the bacon enough, I would next time chop the bacon more. You will have leftover filling, so fill them up good.

    i made these for a christmas party and people could not stop eating them, everyone loved them. i found it a little difficult to scoop out the pulp but after using a mellon baller things went much faster. i also found that i was able to make about ten more then the recipe called for. overall it was great.
