Prepare the pancake batter as directed on the package adding only enough water to make a thick batter.
Heat oil in a deep skillet or deep fryer to 360 degrees F.
Slice the zucchini 1/8-inch thick. Dip the zucchini slices into the batter, letting any excess drip off but making sure they are coated completely. Add the battered slices to the hot oil and cook until golden brown on each side.
Remove the zucchini from the oil and let drain on paper toweling. Immediately sprinkle with salt. Serve hot.
