1 sugar pumpkin
salt and pepper to taste
1 cup all-purpose flour
1/2 cup butter
Cut pumpkin in half, remove seeds, strings and peel off the outer skin. Cut pumpkin into 2 x 3 inch pieces.
Season the pumpkin pieces with salt and pepper. Coat evenly with flour.
Melt butter in a large deep skillet over medium to medium-high heat. Cook pumpkin on both sides in hot butter, until golden brown and tender.

My grocery store just got pumpkins in so I tried this and it is so good! Cutting up the pumpkin is a bit of a chore but I'd say the work is worth it. I'm going to make this again. Oh, I added a dash or two of cayenne pepper to the flour mixture. Wonder how this would be deep fried? Although the butter flavor did add a lot.
