This recipe for deep fried cheese makes a great appetizer or starter. Serve it on a bed of salad greens for a pretty presentation.

ingredients

1 log fresh goat cheese
1/4 cup all-purpose flour
1 egg, lightly beaten
1 1/2 cup fresh white bread crumbs
vegetable oil, for frying
2 cups mixed salad greens

directions

Slice the goat cheese into 1/2-inch rounds.

Place the flour in a shallow dish. Add the beaten egg to another shallow dish. Place the bread crumbs in a third dish.

First, dip each piece of cheese in the flour, shaking off any excess. Next, dip the cheese in the egg, coating all sides and letting any excess drip off. Last, press all sides of the cheese into the bread crumbs, patting lightly so they adhere. The cheese should be completely coated.

Heat 2-inches of oil in a deep skillet (or use a deep fryer) to 350 degrees F.

Carefully add the cheese to the oil in batches. Let cook for 45-50 seconds or until golden brown, turning as needed.

Remove the cheese to paper toweling to drain and repeat with the remaining cheese slices.

Line plates with salad greens and place the breaded goat's cheese on top. Serve immediately.
