Herbed Goat Cheese Butter

ingredients
1/2 cup unsalted butter, cut into pieces, at room temperature
4 ounces soft goat cheese, such as Montrachet, at room temperature
1/4 cup fresh parsley leaves
2 tablespoons fresh dill
OR
1 teaspoon dried dill
2 tablespoons snipped fresh chives
freshly ground black pepper
Crackers, melba toast or thinly sliced French bread
directions
Using a processor, blend all ingredients except crackers until smooth, stopping once to scrape down sides of work bowl, about 40 seconds.
Transfer mixture to 1-cup crock or bowl. Cover and refrigerate at least 2 hours. (Can be prepared 3 days ahead.)
Soften slightly at room temperature before serving. Serve with crackers.
