Goat Cheese And Leek Appetizers

ingredients
2 tablespoons extra-virgin olive oil
1/2 cup thinly sliced leek, white and light green parts
kosher salt
4 ounces goat cheese, flavored or plain
plain crackers, such as water crackers
directions
Heat olive oil in skillet over medium-high heat. When oil is hot, reduce heat and saute leeks until soft, about 4 minutes. Add kosher salt to taste. Remove from heat and blot on paper towel.
Spread about 1 teaspoon of goat cheese on a cracker and top with leeks. Repeat. Arrange on platter and serve immediately.
