ingredients

bread slices

1st sandwich

1/2 cup cottage cheese, low-fat
2 tablespoons peanut butter

2nd sandwich

1/4 cup cottage cheese, low fat
1 hard boiled egg, chopped
1/4 cup alfalfa sprouts,
1 dill pickle, chopped

3rd sandwich

1/8 cup cottage cheese, low-fat
2 teaspoons chives
2 tablespoons Cheddar cheese, grated
1/4 cup celery, finely diced

4th sandwich

1/4 cup cottage cheese, low-fat
2 tablespoons raisins
2 tablespoons cashews, chopped
1/2 teaspoon cinnamon

directions

Mix ingredients for sandwich of choice.

These are good on basic whole-wheat bread, but try having them in Syrian flat breads, or even as open-face sandwiches heated up in the oven.

On hot days these combinations make a cool lunch served on a bed of lettuce with muffins on the side.
