ingredients
1/2 cup butter
2 onions, peeled and chopped
1 can (28 ounce size) chopped tomatoes
2 tablespoons chopped fresh flat-leaf parsley
2 teaspoons granulated sugar
1 teaspoon salt
1 teaspoon crushed dried basil
1/2 teaspoon ground black pepper
2 cups shredded cheddar cheese
8 slices wheat bread, toasted
directions
Melt butter in a large saucepan over medium heat. Add onions and saute until tender (about 4 minutes).
Add tomatoes, parsley, sugar, salt, basil and pepper. Bring to a boil, then reduce heat to low. Cover and simmer for 10 minutes.
Uncover and add cheddar cheese. Stir until just melted.
Serve immediately over toast.
