Avocado and Goat Cheese Sandwiches - CDKitchen.com

ingredients

1 large ripe avocado, peeled, pitted and roughly chopped
1 clove garlic, finely chopped
1 tablespoon lemon juice
salt, to taste
freshly ground black pepper, to taste
1 French baguette cut into 4-inch lengths and split,
OR
6 crusty rolls, split
6 ounces goat cheese
2 ripe tomatoes, sliced

directions

Mix together the avocado, garlic, lemon juice, salt, and pepper.

Spread the avocado mixture on one side of the bread. Spread the goat cheese on the other side, and place the tomato slices in between.
