ingredients
1 package large dried lima beans
1 cup dark brown sugar
1 cup ketchup
5 tablespoons bacon fat
salt and pepper, to taste
6 slices bacon, cooked
directions
Sort lima beans and remove any small stones and soak overnight in water.
The next day, drain and cover lima beans with fresh water. Boil for 20 minutes or until just tender, but not mushy. Stir in brown sugar, ketchup and bacon fat. Season with salt and pepper.
Pour into a large casserole. Cover with strips of bacon. Bake at 325 degrees F for 1 hour.
