The crockpot is an ingenious solution to the hassle of dried beans. Corn, celery, and onions with dried limas is a fantastic "set it and forget it" option for a healthy veggie side.
1 pound dry lima beans
1 onion, chopped
3 stalks celery, sliced
2 quarts water
1 package (16 ounce size) frozen corn
Combine the lima beans, onion, celery, and water in the crock pot. Cover the crock pot and cook on low heat for 6-8 hours or until the lima beans are tender.
Turn the crock pot to high heat. Drain the water from the crock pot. Add the corn, salt, and pepper. Cover the crock pot and cook for 30 minutes on high heat, or until the corn is heated through.
Drain off any excess liquid and serve the vegetables hot.

going to try for this Thanksgiving but not sure how to slice the celery can you advise?
Just slice it crosswise into about 1/2-inch slices.
