under 30 minutes
ingredients
8 baby turnips
1 tablespoon butter
salt and pepper
1 tablespoon water
1 teaspoon honey
Chanterelles
2 teaspoons grapeseed oil
4 ounces chanterelles
2 sprigs flat leaf parsley, minced
salt and pepper
directions
Scrub baby turnips of all dirt. Remove stem and split in half.
In a saute pan over high heat, melt butter. Add turnips to melted butter. Season with salt and pepper.
Add the water and the honey to the pan and reduce heat. Cook turnips until tender. Set aside, keeping warm.
To prepare chanterelles, scrub them of all dirt. Remove stems. Dry chanterelles and then coarsely chop.
Heat a saute pan over medium-high heat. Add the grapeseed oil to the pan. Add chanterelles, parsley and salt and pepper.
Leave the chanterelles in the pan, without stirring or shaking the pan, so the mushrooms caramelize a bit on one side. When caramelized, remove from pan and add to turnips. Keep warm.
