Leftover Turkey Salad

Give your holiday leftovers a fresh twist. Imagine tender chunks of turkey mingling with the crispness of celery, the subtle bite of green onions, and the nutty crunch of toasted pecans in this simple salad.
ingredients
3 1/2 cups diced cooked turkey
4 ribs celery, thinly sliced
4 green onions, thinly sliced
1/2 cup chopped toasted pecans
1/2 cup diced red bell pepper
1/2 cup mayonnaise
1 tablespoon lemon juice
1/4 teaspoon dried dill
1/4 teaspoon salt
1/8 teaspoon black pepper
directions
Combine the diced turkey, celery, green onions, pecans, and bell pepper in a large bowl. In another bowl, mix together the mayonnaise, lemon juice, dill, salt, and pepper. Stir the mayo mixture into the turkey, mixing well.
Cover the turkey salad and chill for 3-5 hours or overnight. When ready to serve, stir the turkey salad and add additional mayonnaise if it seems dry.

Yummy and really simple! Try adding some dried cranberries and cashews, if you like.
