It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).

If a frittata is an egg dish with some vegetables inside, this kugel is the exact opposite. Eggs hold together a load of veggie goodness from zucchini, broccoli, and carrots while the whole thing bakes to perfection.

3 zucchini
2 bunches broccoli stalks
2 carrots, peeled
1 potato, peeled
1 large onion, peeled
3 eggs
1/2 cup oil
1 1/2 teaspoon salt
black pepper, to taste
Preheat the oven to 350 degrees F. Grease a 2 quart baking dish.
Grate all the vegetables and combine in a bowl. In another bowl, beat together the eggs, oil, salt, and pepper. Combine with the vegetables and mix well.
Transfer the mixture to the prepared baking dish. Place in the oven and bake for 1 1/4 hours at 350 degrees F or until set.

I made 30 servings of vegetable kugel for a luncheon and there are no leftovers! They loved it!
