1 celery root
1 1/2 tablespoon unsalted butter
2 tablespoons water
1/4 teaspoon salt
1/8 teaspoon sugar
directions
Preheat oven to 400 F degrees. Wash celery root. Wrap in aluminum foil. Place on a baking sheet. Bake for 1 hour and 20 minutes or until tender. Cool the celery root to room temperature. When cool enough to handle, pare celery root with a small paring knife. Halve and cut into 1-inch chunks. Heat butter, water, salt, and sugar in a medium skillet over moderate heat. Add celery root; cook until heated through and liquid has evaporated, about 4 minutes.
