Bacon Rice Stuffing

If you are looking for a decadent stuffing, this is it. Tender rice is mixed with smoky bacon, wine, butter, onion, and celery and is used to stuff a turkey before roasting.

ingredients
4 cups cooked long grain rice, cooled completely
2 cups thinly sliced celery
1/4 cup chopped fresh parsley
1/3 cup melted butter
1/4 cup white wine or chicken broth
1 medium onion, chopped
1 pound crisply cooked bacon, coarsely chopped
1/4 teaspoon salt
1/4 teaspoon black pepper
directions
Combine the cooked rice, celery, parsley, melted butter, wine, onion, bacon, salt, and pepper in a bowl. Mix well.
Eight cups of the rice stuffing will stuff a 12-14 pound turkey.

I have never liked any stuffing anyone has ever made, no matter what they put in it that made it "different". I had tried different people's stuffings with the same result that involves a particular taste I just can't describe. I was old enough to buy alcohol by the time someone made a "rice stuffing" for me, and I went back for seconds. I didn't get the recipe, unfortunately, and later went looking to find one I liked. Not an easy task, as I'm picky and don't care for things many people use to flavor their recipes. This recipe has become my favorite, with the following substitutions/suggestions: wild rice and chicken broth (I only cook this with turkey), maple bacon, onion powder in place of the onion, and asparagus in place of the celery. It's also important to note that this stuffing will gain a lot of flavor from any marinade you use on the turkey. Not all recipes work well when you start toying with the ingredients, but this is a fantastic recipe and works well with minor substitutions.
