1 cup long grain rice
1 large onion, chopped
1 teaspoon salt
1/2 teaspoon poultry seasoning
1 tablespoon soy sauce
1 large bell pepper, seeded and chopped
2 1/2 cups chicken broth
Preheat the oven to 375 degrees F.
Combine the rice, onion, salt, poultry seasoning, soy sauce, bell pepper, and broth in a 2-quart baking dish.
Cover the baking dish and place the rice o'brien in the oven. Bake at 375 degrees F for 30 minutes or until the rice is tender, stirring once or twice during the cooking time.
Serve the rice hot.

A great way to dress up plain rice. We used instant brown rice instead of long grain white rice. Our cooking time still took 30 minutes so that time might need to be adjusted upward for long grain rice (keep that in mind!). We also used a red bell pepper for added color, but green (or any bell color) would work just as well.
