1 cup long grain rice 1 large onion, chopped 1 tablespoon soy sauce 1 large bell pepper, chopped 1 teaspoon salt 1/2 teaspoon poultry seasoning 2 1/2 cups chicken broth
In a 2 quart baking dish combine rice, chopped onion, salt, poultry seasoning, soy sauce, chopped bell pepper and chicken broth. Cover and bake at 375 degrees F. for 30 minutes, stirring occasionally until rice is tender and bubbly.

A great way to dress up plain rice. We used instant brown rice instead of long grain white rice. Our cooking time still took 30 minutes so that time might need to be adjusted upward for long grain rice (keep that in mind!). We also used a red bell pepper for added color, but green (or any bell color) would work just as well.
