ingredients
Creamy Horseradish Dipping Sauce
4 tablespoons unsalted butter
4 tablespoons all-purpose flour
2 cups whole milk
1/2 cup heavy cream
3/4 teaspoon salt
1 teaspoon freshly ground black pepper
1 teaspoon fresh lemon juice
2 tablespoons prepared horseradish
Seasoning Mix
1/3 cup salt
2 tablespoons cayenne pepper
1 tablespoon gumbo file powder
1 tablespoon onion powder
1 tablespoon garlic powder
1 tablespoon ground white pepper
1 tablespoon paprika
1 tablespoon freshly ground black pepper
Oysters
2 cups all-purpose flour
6 cups peanut oil
40 select shucked oysters
directions
Prepare the dipping sauce first: Heat the butter in a saucepan over medium heat. Whisk in the flour. Cook, stirring constantly, for 5 minutes.
While stirring, slowly add the milk and cream. Bring to a simmer. Add the salt, pepper, lemon juice, and horseradish. Stir well. Set the heat to the lowest setting and keep warm while preparing the oysters.
Combine all the ingredients for the seasoning mix. Add 2 tablespoons of the mix to the flour and mix well.
Heat the oil in a deep, heavy skillet to 350 degrees F.
Working with about 10 oysters at a time, sprinkle them in batches with 1/2 teaspoon of the spice mixture then toss in the seasoned flour mixture, shaking off any excess flour.
Add the oysters to the hot oil so they are not touching. Fry for 1 minute or until golden brown. Remove with a slotted spoon to paper toweling to drain. Repeat with remaining oysters.
Serve the fried oysters immediately with the creamy horseradish dipping sauce.
