Taco Crunch Casserole

Yummy and versatile dish made with ground beef, sweet corn, and salsa. Top with cheddar and crushed tortilla chips to serve it casserole-style, or skip the crushed chips on top and serve it as a nacho dip or taco filling.

ingredients

1 pound ground beef
1 onion, chopped
1/2 green bell pepper, chopped
1/2 package (16 ounce size) frozen sweet corn
2 tablespoons taco seasoning mix
2/3 cup water
8 ounces salsa
crushed tortilla chips
Cheddar cheese

directions

Brown beef and onion together. Add green pepper after meat is browns and cook for a few minutes. Add corn, taco seasoning, water and salsa, mixing all together.

Spread half in a 9"x13" dish. Top with chips and shredded Cheddar cheese. Add remaining meat mix and top again with the remaining chips and cheese.

Bake until heated through (about 20 minutes) at 350 degrees F. Serve immediately.

    I added sliced olives and left out the green pepper. No other changes to the recipe. It was okay, but maybe adding fresh cilantro or something else would make it a little more interesting.

    Delicious! Prepared as directed, turned out good. Topped serving with sour cream.

    Very tasty! I thought water amount was fine. The tortilla chips soak up a bunch I think (and get all soggy and delicious). An easy fast taco casserole with great flavor. Oh and make sure you drain the beef (which the recipe doesn't mention).

    Definitely not bad! The casserole ended up a little watery so I'd cut the amount of water in half next time (or even skip it if your salsa isn't real thick). You can very the flavor a little by using different taco seasoning mixes (heat levels) and salsa (green salsa might look a little funny but I bet it would taste great!).
