ingredients

1/3 cup butter, melted
1/2 teaspoon salt
1/4 teaspoon chili powder
1/8 teaspoon cayenne pepper
1/8 teaspoon black pepper
8 cups shredded or sliced potatoes
1 medium onion, sliced or chopped
1 1/2 cup shredded jalapeno Jack cheese

directions

Preheat the oven to 400 degrees F. Grease a 9x13-inch baking dish.

Combine the melted butter, salt, chili powder, cayenne, black pepper, potatoes, and onions in a bowl. Gently toss to coat the potatoes and onions in the butter mixture.

Transfer the mixture to the greased baking dish. Place the baking dish in the oven and bake at 400 degrees for 1 hour, or until the potatoes are tender. Sprinkle the potatoes with the cheese and return to the oven for 1-2 minutes, or until the cheese is melted.

Serve hot.
