Herbed Julienne Potatoes

ingredients
2 cups potatoes, cut into thin strips
1 small onion
1 teaspoon mixed dried crushed herbs (thyme, basil, oregano, rosemary)
2 tablespoons butter or margarine
2 tablespoons all-purpose flour
1 cup milk
1 teaspoon salt
pepper, to taste
Parmesan cheese, grated
directions
Cook cut potatoes in boiling water until tender. Drain and set aside in a warm dish.
Brown onion and herbs in butter. Add flour, stirring until mixed with butter. Add milk, salt and pepper.
Cook in a double boiler for 20 minutes (or over VERY low heat in a heavy saucepan, stirring often). Strain or remove onion and pour over cooked potatoes. Sprinkle with Parmesan cheese and serve.
