This is an easy and fancy way to serve mashed potatoes. Use your favorite recipe for the potatoes. You can also use the kind you buy in the refrigerated section of your grocery store. Instant potatoes don't work as well in this recipe as they tend to be more gluey but they can be used in a pinch. You can also top the potatoes with cheese or add any additional seasonings as desired.

serves/makes:

ready in:
  under 30 minutes

ingredients

4 cups prepared mashed potatoes, warm (not hot)
1/4 cup melted and slightly cooled butter
2 egg yolks, beaten
1 teaspoon Dijon mustard
salt and white pepper, to taste

directions

Preheat the oven to 400 degrees F. Grease a baking sheet.

Combine the warm mashed potatoes, melted butter, egg yolks, mustard, salt, and white pepper in a bowl. Stir to combine the ingredients but do not overmix or the potatoes will not retain their shape.

Using a spoon or pastry bag, mound the potato mixture on the greased baking sheet leaving room between the mounds to allow for spreading.

Place the baking sheet in the oven and bake at 400 degrees F for 15 minutes or until the potatoes are light golden brown.

Remove the baking sheet from the oven and carefully remove the duchess potatoes from the baking sheet with a spatula. Serve immediately.

recipe tips

Make sure the mashed potatoes are warm (not hot) when mixing with the other ingredients, as this makes them easier to pipe and helps the egg yolks incorporate smoothly.

Avoid overmixing the potato mixture after adding the egg yolks to prevent the potatoes from becoming too dense. This will also help keep them from deflating when baking.

For a golden and slightly crispy exterior, you can brush the piped potatoes lightly with an additional beaten egg or egg wash before baking.

Letting the duchess potatoes cool for a few minutes on the baking sheet after removing them from the oven can make them easier to transfer to a serving dish without breaking.

Try different shapes and sizes when piping the potatoes to add variety and visual appeal.

common recipe questions

Can I add cheese to the duchess potatoes mixture?

Yes, you can add cheese to the duchess potatoes mixture for extra flavor. Grated Parmesan, sharp cheddar, or Gruyere cheese would work well. Add about 1/2 cup of grated cheese to the potato mixture before piping or spooning it onto the baking sheet. The cheese will melt during baking, adding a deliciously rich taste and slightly crispy texture to the tops of the duchess potatoes. You can also sprinkle the tops of the duchess potatoes with cheese if you don't want to add it to the potatoes directly.

How can I make the duchess potatoes more flavorful?

To make the duchess potatoes more flavorful, try adding additional seasonings into the potato mixture. Minced garlic, chopped fresh herbs like chives, parsley, or thyme, a pinch of nutmeg, or smoked paprika for a hint of smokiness. Adjust the amount of these seasonings to your taste, starting with a small amount and adding more as needed.

Can I make duchess potatoes ahead of time?

Yes, you can prepare duchess potatoes ahead of time. Pipe or spoon the potato mixture onto the baking sheet as directed, then cover and refrigerate for up to one day before baking. When ready to serve, bake them in the preheated oven. Keep in mind that refrigerated potatoes may take a few extra minutes to become golden brown.

What's the best way to pipe duchess potatoes for a more elegant presentation?

For a more elegant presentation, use a piping bag fitted with a large star tip. Fill the piping bag with the potato mixture, then pipe the potatoes onto the greased baking sheet in swirling peaks or rosettes. This method creates a more refined look with ridges that crisp up beautifully in the oven. If you don't have a piping bag, you can create a makeshift one by snipping the corner off a large plastic food storage bag and using it to pipe the potatoes.
