What do you get when you mix mashed potatoes with grated potatoes? Boxty, of course! The mix of potatoes gives this traditional Irish potato pancake a unique texture, and it's tough to beat for comfort food when served with a little sour cream or maple syrup.

2 raw potatoes
1 1/2 cup mashed potato
2 cups flour
1/2 teaspoon baking soda
salt and pepper
1/2 cup milk, more as needed
1 egg
1 tablespoon butter
1 tablespoon oil
1 pound thick cut bacon (optional)
Peel raw potatoes and grate. Mix with the mashed potatoes.
In separate bowl mix flour, baking soda, salt and pepper. Add to potatoes and stir to combine.
Beat egg with milk and add to mixture. Stir to combine adding more milk if necessary just until batter is to the consistency where it will drop from a spoon.
Drop about 2 tablespoonfuls at a time onto a hot griddle or frying pan with the grease from cooked bacon or a combination of the butter and oil. Cook over a moderate heat for 3-4 minutes on each side.
Serve with bacon, maple syrup, sour cream, or butter.

I loved the corned beef boxty I would get in my old town and decided to make it for company. I used this recipie and a corned beef recipe from this site as well as a cream mustard recipe from here. It was amazing. Tips: The second time we used a very fine grater for the raw and this made them smoother and cook better. Try and make them thin. We would put a scoop on the skillet and then slowly pull off the top batter to the sides. As the bottom layer solidified to the grill you kept pulling the remaining batter to the sides. Made them thin. Also, consider a more oval shape if using a filling as it folds over better. Best meal I've had in years!

Boxty is served at a local restaurant covered in thick beef stew. It's a family favorite! Now, I can make it at home!
